They take a young gouda made near Monroe, WI and then applewood from the only organic orchard in Missouri to a small family owned smokehouse west of Rockford, IL.; One of Cheese Peoples's most popular cheeses. The smoky character is reserved, almost sweet. If you've only had the typical nose burning hickory smoked version, this is a treat.  A favourite of the under 10 crowd too.
