We age our Raw Mild Cheddar for a shorter period of time than our Raw Sharp Cheddar, so it has a little less of the tanginess that’s associated with the aging process. But Raw Mild Cheddar is still made with the same pasture-raised cows’ milk, and it’s still produced in small batches by the same master cheesemakers.
